Buttermilk Rolls & Highland Lemon Pie


I've had a request to post a few recipes that we are cooking up in our kitchen today so here ya'll go!

Buttermilk Rolls (bread machine recipe)

3/4 cup buttermilk
1/2 cup water
3 tbsp butter
3 tbsp honey
1tsp sea salt
3 cups bread flour (I used White Lilly Unbleached)
2 tsp yeast or 1 packet (I used rapid rise)



Warm milk, water and butter just until butter is almost melted then place in the bread machine along with the honey and salt. Let cool and then add bread flour level out and make a well in the middle for the yeast. I used the dough setting on the bread machine then removed the dough (can be sticky so add enough flour so that you can work with them) and shaped them into mini loaves which I then brushed with melted butter and let rise about 30 minutes or so covered. Bake at 350 until lightly browned on the tops then brush with melted butter (keeps the tops soft).


Highland Lemon Pudding Pie (from The Highlander's Cookbook)

4 egg yolks
1 cup sugar
1/2 cup butter
1/2 cup lemon juice

4 egg whites
1/4 cup sugar
1 9" pie shell baked

In the top of a double broiler, beat egg yolks and 1 cup sugar until thick and lemon colored. Add butter (cubed first), and lemon juice. Cook over boiling water, stirring constantly until thick. Cool to room temperature.

While the pudding is cooling beat the egg whites until stiff but not dry. Gradually add the 1/4 cup sugar.

Once the pudding is cool gently fold egg whites into the lemon mixture. Turn into baked pie shell and bake for 20 minutes or until brown on top.
